After setting up a bin and adding worms I add a 1-2 inch layer on top of shredded paper. Every other day or so I feel the top layer of paper, if it feels wet I leave the lid off for a day or so, when dry close the lid.
My bins (14 gallon rubbermade) are inside so they stay 60-70 degrees.
