I realize this is an old question now, but I hope you've been feeding them. Have some food at room temperature for a few days to get them "ready to eat".
Start with a cup,assuming you started with a pound of worms, and see how long it takes for them to eat it. If they eat it after a few days, slowly increase the amount.

I'm not sure of the watering part. Food is 80% water, so supposing your bin is a plastic one, and indoors, watering of any kind isn't necessary.

I'm sure the problems you experienced may just have been from stress, and they are settling in much better now.
